These interviews were conducted by Houston Community College students of restaurant owners from the Latin American community in Houston, Texas. 

The participants discuss their upbringings, what led them into the hospitality industry, the type of establishments they run (ranging from restaurants to food trucks), what influenced them to serve the type of the food they specialize in, how they have built and maintained a loyal customer base, and what ambitions they have for the future.
